Ingredients

  • 1 Can Garbanzo Beans
  • 1 Can Black Beans
  • 1 Can Corn
  • 3 Bell Peppers
  • 1 Purple Onion
  • 1 Tomatillo
  • 1 Cup Cilantro
  • 1 Lime juiced
  • 1 Tablespoon Garlic
  • 1 Tablespoon Cumin
  • 1 Teaspoon Salt

Instructions

  • Get out a large mixing bowl and a cutting board. Chop up the bell peppers, purple onion, tomatillo, and cilantro then put them in the large bowl. Cut the corn off the cob carefully and add that to the bowl as well.
  • Open the garbanzo and black beans with a can opener, drain, and add to the veggies in the bowl. Juice the lime, mince 3 cloves of garlic, and add to the bowl. Last but not least, add the spices—cumin, and salt. Stir all of the ingredients & enjoy!
