Start by putting the 2 cups of oats in a food processor or blender. Blend the oats until they have a fine flour-like consistency. This should take about 1 minute of blending.
Once the oats are ground into flour, add the eggs, bananas, almond milk, baking powder, cinnamon, vanilla, and salt to the blender. Blend until smooth.
Let the batter sit for about 5 minutes while you preheat your waffle maker.
Oil your waffle maker before pouring the mix on the iron (I like to use coconut oil).
When the waffle maker is hot, add a scoop (about 1/2 cup is what I use) of batter onto the iron. Cook the waffles until they are golden brown and crisp on the edges. This will take about 4 minutes and will all depend on the type of waffle maker you have.
Serve your oat flour waffles with your favorite toppings, such as fresh fruit, greek yogurt + maple syrup topping, nut butter, or toasted nuts, and enjoy!
