Ingredients

  • 1 Box Chickpea Penne Pasta I use Banza
  • 6 Chicken Thighs
  • 1 Large White Onion
  • 8 Cloves Garlic minced
  • 2 Cups Fresh Parsley chopped
  • 1 Cup Chicken Broth
  • 2 Tablespoons Olive Oil
  • 1 Cup Parmesan shredded
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Italian Seasoning
  • 1 Tablespoon Oregano
  • Salt & Pepper to taste

Instructions

  • Start by seasoning the chicken thighs for maximum flavor. Pat the chicken dry with a paper towel, then rub it with a blend of garlic powder, Italian seasoning, oregano, salt, and pepper. Heat one tablespoon of olive oil in a large skillet over medium-high heat. Once the oil shimmers, place the chicken thighs in the pan and sear for 4-5 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and tent it with foil to keep warm.
  • In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent and fragrant. Stir in the minced garlic, cooking for another minute while stirring constantly to avoid burning. This creates a flavorful base for the sauce.
  • While the onion and garlic cook, bring a large pot of salted water to a boil. Add the chickpea penne pasta and cook according to the package instructions, about 7-9 minutes. Stir occasionally to prevent sticking. Drain the pasta and set it aside once it’s cooked al dente.
  • Return to the skillet and pour in the chicken broth. Stir well to deglaze the pan, scraping up any browned bits from the bottom. Let the broth simmer for 2-3 minutes to reduce slightly and intensify the flavors.
  • Add the cooked pasta to the skillet, tossing it with the onion-garlic sauce until evenly coated. Slice the chicken into strips or bite-sized pieces and add it to the pasta. Sprinkle the shredded Parmesan cheese over the mixture, stirring gently until it melts into a creamy sauce. Finally, stir in the fresh parsley for a burst of color and brightness.
