20 Minute Teriyaki Beef Bowls

Ingredients

  • 1 Pound Lean Ground Beef
  • 2 Cups Rice
  • 2 Cups Broccoli
  • 1 Cup Shredded Carrots
  • 1 Red Bell Pepper
  • 1 Cup Edamame
  • 1/2 Tablespoon Garlic minced
  • 1/2 Cup Green Onions chopped

Easy Teriyaki Sauce

  • 1/4 Cup Tamari or Soy Sauce
  • 2 Tablespoons Honey
  • 1 Teaspoon Sesame Oil
  • 1 Tablespoon Garlic minced
  • 2 Teaspoons Ginger minced

Instructions

  • Cook the rice. While it cooks, chop the vegetables and prepare the teriyaki sauce by whisking together tamari (or soy sauce), honey, sesame oil, garlic, and ginger in a bowl.
  • Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart as it browns. Drain excess grease if needed. Stir in the broccoli, carrots, bell pepper, and edamame, then pour in the teriyaki sauce. Cook for 3-5 minutes until the vegetables are tender but crisp.
  • Serve the beef and veggie mixture over cooked rice. Garnish with chopped green onions and enjoy!
