Ingredients

  • 4 Chicken Sausage
  • 2-3 Sweet Potatoes
  • 1 Red Bell Pepper
  • 1 Purple Onion
  • 2 Cups Brussel Sprouts halved
  • 2 Tablespoons Garlic minced
  • 2 Tablespoons Olive Oil
  • Salt & Pepper to taste

Instructions

  • Preheat your oven to 450°F for perfectly roasted, caramelized ingredients. Slice the chicken sausage into bite-sized rounds and chop the sweet potatoes into small cubes for even cooking. Cut the red bell pepper into thin strips, slice the purple onion into wedges, and halve the Brussels sprouts so they crisp up nicely.
  • In a large bowl, toss the vegetables with olive oil, minced garlic, salt, and pepper until evenly coated. Spread everything onto a large sheet pan, ensuring the ingredients are in a single layer for even roasting.
  • Roast for 25-30 minutes, tossing halfway through for even browning. Once the sweet potatoes are tender, Brussels sprouts are golden, and sausage is sizzling, remove from the oven. Serve hot on its own or with your favorite sides. Enjoy!
