Chicken Salad with Grapes and Almonds

This Chicken Salad with Grapes and Almonds has so much with flavor, it’s easy to make, and loaded with juicy red grapes, tender rotisserie chicken, crunchy celery, and a creamy dressing made with Greek yogurt.

Ingredients

  • 4 Cups Rotisserie Chicken shredded or diced
  • 1 Cup Celery chopped
  • 1 Cup Red Grapes chopped in half
  • 1/2 Cup Parsley chopped
  • 1/2 Cup Almonds crushed
  • 1 Cup Greek Yogurt or Avocado Mayo
  • 1 Tablespoon Garlic minced
  • 1 Lemon juiced
  • 1 Teaspoon Salt & Pepper

Instructions

  • You will first want to prep all of the ingredients—shred or dice the rotisserie chicken, then chop the celery, grapes, and parsley. Add the chicken, celery, grapes, parsley, and almonds to a large bowl. 
  • For the dressing, mix in Greek yogurt or avocado mayo with the minced garlic, salt, and pepper. Stir until all ingredients are well combined and coated in the creamy dressing. Adjust salt and pepper as needed! 
  • Once everything is well combined—serve right away, or refrigerate for 15-20 minutes to let the flavors blend & chill. Enjoy!
