Ingredients
4CupsRotisserie Chicken shredded or diced
1Cup Celery chopped
1 CupRed Grapeschopped in half
1/2CupParsleychopped
1/2 CupAlmondscrushed
1CupGreek Yogurt or Avocado Mayo
1TablespoonGarlicminced
1Lemonjuiced
1 TeaspoonSalt & Pepper
Instructions
You will first want to prep all of the ingredients—shred or dice the rotisserie chicken, then chop the celery, grapes, and parsley. Add the chicken, celery, grapes, parsley, and almonds to a large bowl.
For the dressing, mix in Greek yogurt or avocado mayo with the minced garlic, salt, and pepper. Stir until all ingredients are well combined and coated in the creamy dressing. Adjust salt and pepper as needed!
Once everything is well combined—serve right away, or refrigerate for 15-20 minutes to let the flavors blend & chill. Enjoy!
