Date Snickers

Date sweetened, ice cream & peanut butter filled, chocolate coated Date Snickers. They’re a real life dream.

Ingredients

  • 12 Large Dates
  • 1/2 Pint Coconut Ice Cream I use So Delicious—no added sugar
  • 2 Tablespoons Peanut Butter
  • 1 Cup Chocolate I use Lily’s—no added sugar

Instructions

  • Begin by pitting the large dates.
  • Lay plastic wrap on the surface you will be making the Date Snickers on.
  • Lay the dates one at a time flat in horizontal rows of 3, and vertical rows of 4. Mash the edges of the dates together so they form 1 large rectangle.
  • Add a thin layer of peanut butter over the dates.
  • Next, add a layer of the coconut ice cream over the peanut butter.
  • The ice cream will begin to melt quick to you’re going to want to do this quickly!
  • Lift the long sides of the rectangle, so they meet at the top, and press the dates together. You should have one long log of ice cream and peanut butter wrapped in dates. Wrap the plastic around it, and transfer to the freezer!
  • I’d suggest letting that freeze for an hour.
  • Once you’re almost ready to the date log out of the freezer, melt the chocolate chips.
  • Remove the date log from the freezer & cut them into 1 inch pieces. They should basically look like date wrapped ice cream sushi! Add a generous dollop of chocolate to each piece and enjoy or freeze if you’re not eating them right away!
