Begin by preheating your oven to 400℉. While the oven is heating, prepare the chicken by patting it dry with paper towels. This step helps the coating adhere better to the chicken.
In a shallow bowl, beat the eggs. In a separate bowl, combine the oat flour (or your chosen flour) with half of the shredded Parmesan and the minced garlic. Dip each piece of chicken into the egg mixture, then coat it evenly with the flour mixture. The oat flour gives a nice texture and flavor to the breading.
Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the breaded chicken pieces. Cook each side for about 3-4 minutes, or until golden brown. Transfer the chicken to a baking dish.
Spoon the marinara sauce over each piece of chicken, ensuring it's generously covered. Sprinkle the remaining shredded Parmesan over the sauce.
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Chicken is generally safe to eat when it’s reached an internal temperature of 165℉.
