  • 3-4 Chicken Thighs
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Salt & Pepper
  • 1/4 Cup Chicken Stock

Instructions

  • Place your cast iron Dutch oven over high heat and drizzle in the olive oil. Allow the oil to heat for about a 2 minutes until shimmering. Pat the boneless skinless chicken thighs dry with a paper towel. Sprinkle both sides with salt and pepper for a well-seasoned base.
  • Lay the chicken thighs in the Dutch oven in a single layer. Sear them for about 2-3 minutes per side to develop a golden crust. This step locks in the juices and adds depth of flavor.
  • Reduce the heat to medium. Add a splash of chicken stock if desired, cover the Dutch oven with its lid, and let the chicken cook for 15 minutes. This ensures the chicken cooks through evenly and remains juicy. 
  • Remove the Dutch oven from the heat. Shred the tender chicken thighs with two forks until it reaches your desired texture.
