These sweet & tart Healthy Coconut White Chocolate Balls are truly divine, and taste exactly like my favorite key lime pie.

Ingredients
2CupsShredded Coconut
1CupAlmond Flour
2Limesjuiced and zested
1/2CupHoney
Lily’s White Chocolate Chips
Instructions
Get out a medium sized mixing bowl and add the shredded coconut, almond flour, lime juice, and honey. Mix well until everything is evenly combined.
Get out a baking sheet and cover it in parchment paper. Roll the mixture into balls. Each ball will use about 2 tablespoons of the shredded coconut mixture. Place them on the baking sheet and once you’ve rolled them all, stick the baking sheet in the freezer while you melt the white chocolate.
To melt the white chocolate—get out a small bowl and microwave the chocolate chips for 15-30 second increments, and stir in between. Do this until all of the chips are melted and smooth. Add a teaspoon of coconut oil to achieve a runnier consistency if you desire. This may make it easier to get the coconut balls completely coated when you dip them.
Take the coconut balls out of the freezer and dip them into the melted white chocolate using a spoon. Make sure they’re completely coated. Set on the parchment paper. I like to top them with a sprinkle of lime zest for an extra burst of flavor. Freeze until the chocolate is completely hardened and enjoy!
