These Hot Honey Roasted Brussel Sprouts are an addictive side dish with crispy caramelized edges and a kick of heat. The combination of roasted brussel sprouts and honey with spicy chili crunch make them perfectly sweet & savory!
Preheat your oven to 400°F (200°C). Rinse the brussel sprouts under cold water and pat them completely dry. Trim the stem ends and remove any yellowed outer leaves. Cut each sprout in half lengthwise.
In a large mixing bowl, combine honey, chili crunch, and chopped green onions (reserve some for garnish). Whisk until well blended.
Add the halved brussel sprouts to the bowl with the hot honey glaze. Toss thoroughly until every piece is evenly coated. Season with ½ teaspoon of salt & pepper. Sprinkle the sesame seeds over the mixture and toss again.
Spread the coated brussel sprouts in a single layer on a large baking sheet lined with parchment paper. Make sure the pieces aren't touching, overcrowding leads to steaming rather than roasting.
Roast for 15 minutes, then flip each brussel sprout. Continue roasting for another 15 minutes until the edges are deeply caramelized and crispy.
Remove from oven and transfer to a serving dish. Top with the reserved chopped green onions and an extra sprinkle of sesame seeds if desired, serve, and enjoy!

Dry thoroughly: Moisture is the enemy of crispy roasted brussel sprouts with honey. Be sure they're completely dry before adding the honey and chili crisp.
Cut Uniformly: Keep your halves similar in size so everything cooks evenly. Smaller pieces will burn while larger ones stay undercooked if the sizes vary too much.
Don't Skip The Flip: Flipping halfway through ensures even caramelization on both sides and prevents burning on just one side.
High Heat Is Essential: The 400°F temperature gives you those crispy, caramelized edges. Don't reduce the heat.
