Chop the pineapple and strawberries into small chunks. In a small bowl or container, add the pineapple, strawberries, and honey. Mash the fruit into a jam like consistency.
Add the chia and coconut milk to the fruit and let it set in the fridge overnight or for about 2-3 hours.
Top it off with more pineapple and strawberries, toasted coconut, & honey!
