Instructions
Start by making the date caramel center. In a blender or food processor, blend the dates, almonds, maple syrup, vanilla, and salt until completely smooth.
Use a tablespoon to measure 1 tablespoon of the date mixture. This will be the amount you’ll need for each ball. Once you’ve measured 1 tablespoon, roll the mixture into balls by placing it between your hands and making a circular motion. Once you’ve rolled all of the date mixture into balls, place them in a freezer safe container. Let them freeze for at least 10 minutes before dipping them in chocolate.
Melt the chocolate chips in the microwave and stir them until they’re smooth. I usually end up microwaving them 1 1/2 minutes total, stopping to stir every 30 seconds.
Next you’ll want to get out a baking sheet and cover it in parchment paper. This is where you’ll place the dipped Salted Caramel Chocolate Date Balls when they’re coated in chocolate, sprinkled in salt, and ready to be frozen.
After the date mixture balls have had at least 10 minutes in the freezer, remove them from the freezer and coat them in chocolate. To do this, place them one by one in the melted chocolate with a spoon and roll the ball around until it’s completely covered in the melted chocolate. Once it’s completely coated, place the finished Salted Caramel Chocolate Date Ball on the baking pan with parchment paper, add a sprinkle of sea salt, and freeze until the chocolate is hard.
The chocolate only takes about 5 minutes to harden, so you can enjoy this treat after 5 minutes of freeze time, or up to 2 months later!
Notes
The sweetness is up to you! I love a sweet treat, that’s why I use 3 tablespoons of maple syrup. If you like a less sweet treat, try using just the dates as sweetener!
