Instructions
Preheat your oven to 350°F and lightly grease a silicone muffin tin to prevent sticking. In a blender, combine the egg whites, cottage cheese, mozzarella cheese, garlic powder, salt, and pepper. Blend until the mixture is completely smooth.
Transfer the blended mixture to a bowl and gently stir in the chopped spinach and diced red bell pepper. Pour the mixture evenly into the muffin cups, filling each about three-quarters full.
Bake the egg bites for 20–25 minutes, or until they are set and slightly golden around the edges. Allow them to cool for a few minutes before carefully removing them from the muffin tin. Serve immediately, or store for meal prep!
