Strawberries and Cream Overnight Oats

Sweet, creamy, berry-filled deliciousness all in one bite. These layered overnight oats are anything and everything you could ever dream of!

Ingredients

  • 1 Cup Oats
  • 2 Cups Greek Yogurt I use Fage 0%
  • 1 Cup Strawberries
  • 2 Tablespoons Pure Maple Syrup
  • 1/4 Cup White Chocolate Chips I use Lily’s sugar free

Instructions

  • In a mixing bowl, combine 1 cup of Greek yogurt, 1 tablespoon maple syrup, and 1/4 cup of water. Mix well to combine. Add 1 cup of rolled oats to the yogurt mixture and stir until the oats are completely mixed in. Get out an airtight container and spread into an even layer at the bottom of the container.
  • In a separate bowl, combine 1/2 cup of Greek yogurt and 1/4 cup of chopped strawberries. Mix well to combine. Spoon the strawberry yogurt mixture over the oat layer in the container.
  • In another bowl, mash the remaining strawberries with a fork until they reach your desired consistency. Add a tablespoon of maple syrup to the mashed strawberries and mix well. Spoon over the strawberry yogurt layer in the container.
  • In a microwave-safe bowl, melt a handful of white chocolate chips in the microwave for 30-second intervals, stirring in between, until they’re completely melted & smooth. Add the melted white chocolate to the remaining 1/2 cup of Greek yogurt and mix well to combine. Spoon the white chocolate yogurt mixture over the mashed strawberry layer in the container. Spread it out evenly.
  • Cover the container with a lid and refrigerate the overnight oats for at least 4 hours, preferably overnight. Top with more strawberries and enjoy!
