Combine the honey with 1 teaspoon fine sea salt (it won't fully dissolve at first). Using a stand or hand mixer with a paddle attachment, start on low for 30 seconds, then increase to medium-high. Whip for 12 to 15 minutes until the honey lightens, & thickens.
Test the texture; it should hold soft peaks and spread like butter. If it's still runny, whip for 2-3 minutes more. Spoon into clean glass jars, leaving a small gap at the top as the honey may expand slightly while setting.
