Easy and Healthy Asian Noodle Soup

This 20 Minute Healthy Asian Soup is so easy to throw together and to be honest, I crave it all the time! Fresh veggies, herbs, broth, spices, and chicken in a pot and you have the most tasty Asian Noodle Soup!

Ingredients

  • 2 Chicken Breasts
  • 1 Rice Noodles
  • 3 Cups Chicken Broth
  • 1/4 Cup Coconut Aminos
  • 2 Tablespoons Garlic
  • 1 Tablespoon Ginger
  • 1 Bunch Cilantro chopped
  • 1 White Onion
  • 1 Lime juiced & zested
  • 1 Tablespoon Sesame Oil
  • 1/4 Cup Rice Vinegar
  • 1 Bunch Green Onions

Instructions

  • Cook the chicken breast in a pan or on the stovetop on medium heat.
  • Grab a medium to large pot, and add the chicken broth, coconut aminos, rice vinegar, sesame oil, ginger, garlic and lime juice—bring to a simmer and add the noodles.
  • Chop the white onion, cilantro, and green onions.
  • Once the chicken is finished—chop it into cubes or slices (however you like it) and add everything to the broth mixture. I like all of my veggies crunchy, so this is why I add it now!
  • Let everything simmer for about 2 minutes once it’s all combined and you’re read to serve the 20 Minute Asian Noodle Soup!
