Pan-Roasted Breakfast Brussel Sprouts with Eggs & Bacon

Ingredients

  • 16 Ounces Brussel Sprouts 1 Bag
  • 4 Eggs Over Easy
  • 4 Strips Bacon Chopped
  • 2 Tablespoons Olive Oil
  • 1/4 Cup Almond Flour
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Paprika
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper

Instructions

  • Preheat the oven to 350℉.
  • Chop your brussel sprouts in half and put them in a large bowl. Add in the olive oil and toss until evenly distributed.
  • Add the almond flour, garlic powder, paprika, salt, and pepper to the brussel sprouts. Toss until evenly distributed.
  • Cover a baking sheet in parchment paper or tinfoil and lay the brussel sprouts on their flat side—this will brown them nicely. Bake for an hour or until browned.
  • While the brussel sprouts bake—cook the bacon until crispy and chop them into bacon bits.
  • 10 minutes before taking the brussel sprouts out of the oven, fry 4 over-easy eggs.
  • Once the brussel sprouts are finished, put them in a large bowl, mix in the bacon, and top with the 4 eggs. Add salt and pepper to taste & enjoy!
