I know brussel sprouts probably aren’t the first thing that come to mind when you’re thinking breakfast. But I am so excited to share this recipe, and it might make them your new favorite breakfast! How to Make Pan-Roasted Breakfast Brussel Sprouts with Eggs and Bacon

These Breakfast Brussel Sprouts offer a delightful twist on the traditional veggie, egg, and bacon breakfast! They feature a delicious blend of pan-roasted, crispy brussel sprouts, crispy bacon, topped with perfectly made over-easy eggs. Here’s what you’ll need.

Ingredients

  • 16 Ounces Brussel Sprouts 1 Bag
  • Eggs Over Easy
  • 4 Strips Bacon Chopped
  • 1/4 Cup Almond Flour
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Paprika
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 2 Tablespoons Olive Oil

Step-By-Step Instructions

Preheat the oven to 350℉ and prepare the brussel sprouts.

To prepare brussel sprouts for cooking, simply remove them from the stems, cut off any browned edges, rinse them well, then dry them thoroughly. Once you’ve prepared them, cut them in half.

If you like, you can prepare your brussel sprouts ahead of time and store them in the refrigerator until you’re ready to cook. This can save you time and make meal prep more convenient!

Add the cut brussel sprouts to a medium bowl. Add the olive oil to the bowl and toss until the brussel sprouts are evenly coated. Next you’ll add the almond flour, garlic powder, paprika, salt, and pepper. Toss again until the brussel sprouts are evenly coated in the spices.

Get out a baking sheet and line it with parchment or tinfoil. Put the brussel sprouts on the baking sheet. When putting the brussel sprouts on the baking sheet, be sure to put the flat side down. This will give them a nice crispy brown! Bake for about 45 minutes, or until crisped to a golden brown. Honestly, I like mine dark brown or slightly burnt, so sometimes I’ll broil them for the last 4-5 minutes at the very end.

Tip: For the perfect brown, let the brussel sprouts bake without touching them too much. Avoid over handling them, as this can cause them to fall apart and steam instead of achieving that desired crispy caramelization!

While the brussel sprouts cook, fry the bacon bits on medium heat over the stove until they’re crispy, then chop into small bits.

When the brussel sprouts only have 10 minutes left to bake—make the over easy eggs.

How to Cook An Over Easy Egg?

I know most of you probably don’t need this explanation BUT I definitely had to look it up the first time! I used to never make over-easy eggs but they’re my husbands favorite…so I think I’ve nearly mastered the art. Turn the stove to medium-high heat with the frying pan on the burner. Add olive oil to the pan and let it heat up. I usually wait about 2 minutes. Crack the egg into the frying pan and let it cook until the edges of the egg white are cooked through. Turn the heat to medium. Flip the egg ( try to do this in one motion to keep the shape and egg yolk from breaking) and let it cook briefly. If you like an egg that that has a more cooked yoke, let it cook longer. Remove the egg from your frying pan to stop the eggs from cooking. You now have a perfect over-easy egg. 🍳

Assemble the Breakfast Brussel Sprouts!

Once the brussel sprouts are are finished, put them in a large bowl and toss with the bacon bits. Serve on a plate and top it off top with an over-easy egg! Add a little more salt and pepper to taste & enjoy!
