- 2 Tablespoons Peanut Butter
- 1 Cup Chocolate I use Lily’s—no added sugar
Date Snickers Step-By-Step Instructions
Start by pitting large dates to prepare your gluten-free, dairy-free, and refined sugar-free Date Snickers. Place a sheet of plastic wrap on your work surface. Arrange the dates flat in horizontal rows of three and vertical rows of four. Mash the edges of the dates together to form one large rectangle, creating a solid base for your Date Snickers.
Spread a thin layer of creamy peanut butter evenly over the dates. Next, add a layer of coconut ice cream on top of the peanut butter. Since the ice cream will melt quickly, work swiftly to ensure it stays intact. Lift the long sides of the date rectangle, bringing them together at the top, and press the dates to seal. You should now have a long log filled with peanut butter and coconut ice cream, wrapped in dates.
Wrap the entire log tightly in plastic wrap and transfer it to the freezer. Allow it to freeze for about an hour to firm up. While waiting, melt your dairy-free chocolate chips, so they are ready for the final step.

These hit the sweet craving & taste exactly like an ice cream snickers bar—of course without having to compromise on choosing healthy! Keeping these types of sweets in the freezer is such a good way for me to stay on track and maintain a balanced and healthy diet.
These are also an amazing pre-workout boost! When I was training for my marathon—these were incredible mid long run as they’re so rich in natural sugars (mainly glucose and fructose). I’ve experimented with a couple types of dates, and come to the conclusion that Large Medjool Dates are the way to go. The flesh of the date has such a soft, caramel like texture that just can’t be beat.
Like I said, Medjool dates are rich in natural sugar and an excellent source of dietary fiber! Making them amazing fore digestive health. These perfectly gooey dried fruits are also loaded with important vitamins and minerals—Vitamin B6, potassium, & magnesium! Even better, they’re known for their high antioxidant content! So, I’m basically saying you can eat a Snickers while improving your health!

This recipe is so easy, and quick—you’re going to love it. To make it even easier, I’ll try to give some pointer and tips!
Ice Cream Selection is important when making this recipe! I say this because the ingredients of the ice cream can change the nutritional value of the entire recipe! Of course, use whatever ice cream is your favorite. But if you’re aiming to use a sugar and dairy free option, I’ll share what typically to use! So Delicious has some amazing coconut milk no sugar added flavors! Butter pecan, vanilla bean, they even have a chocolate—which I want to try next time I make these! Sprouts has an amazing coconut milk no sugar sugar ice cream! These types of ice cream will be a little more expensive, but are really great options! Halo Top (although not dairy or completely sugar free) is another healthier option, and has a ton of flavor options!
Peanut Butter or nut butter choice is also important! When I decide on the type of peanut putter to use, I typically choose brands that only contain peanuts and salt—no added oils or sugars! While the calories look the same, the nutritional value is different! I typically use the Trader Joe’s crunchy, unsweetened, & salted! They roast the peanuts—making it taste divine, & the price is definitely right!
Rolling the Date log is the only step in the recipe that may be difficult if the ice cream has started to melt. It doesn’t have to be a perfect circle. If the ice cream starts coming out, just wrap the plastic wrap tighter and it will all freeze together very well before you coat the Date Snickers in chocolate!

- The ice cream will begin to melt quick to you’re going to want to do this quickly!
- Lift the long sides of the rectangle, so they meet at the top, and press the dates together. You should have one long log of ice cream and peanut butter wrapped in dates. Wrap the plastic around it, and transfer to the freezer!
- I’d suggest letting that freeze for an hour.
- Once you’re almost ready to the date log out of the freezer, melt the chocolate chips.
- Remove the date log from the freezer & cut them into 1 inch pieces. They should basically look like date wrapped ice cream sushi! Add a generous dollop of chocolate to each piece and enjoy or freeze if you’re not eating them right away!
