A recipe passed down from my mom never disappoints, and this Mexican Chickpea Salsa Salad is one of her easy staples! It’s full of bright, colorful, and healthy ingredients. It’s light, refreshing, protein-packed, and just as easy to make as it is delicious. Filled with Mexican-inspired zest & flavor, from chickpeas, bell peppers, tomatillo, cilantro & lots of garlic—this salsa salad makes the best appetizer or meal!

Before we dive in & create this Mexican Chickpea Salsa Salad, let’s take a look at one of my favorite ingredients to cook with—chickpeas! Also known as garbanzo beans, these beans are a pantry essential! They’re nutrient-rich, and a fantastic source of protein and fiber, making them an ingredient I try to always keep in my pantry. Not only are they beneficial to health, they’re so versatile. They can be used in just about any type of recipe—sweet, savory, crunchy, creamy, you name it! With that being said, chickpeas make the perfect foundation for this salsa salad.

Chickpea Salsa Salad Ingredients

  • 1 Can Garbanzo Beans
  • 1 Can Black Beans
  • 2 Cobs Corn (or 1 Can)
  • Bell Peppers
  • Purple Onion
  • Tomatillo
  • 1 Cup Cilantro chopped
  • Lime juiced
  • 3 Cloves Garlic
  • 1 Tablespoon Cumin
  • 1 Teaspoon Salt

This vibrant array of ingredients come together to create my Mexican Chickpea Salsa Salad. Each element of this recipe adds its own unique texture and taste to the mix. Of course the beans bring a wonderful base of creaminess and substance, while the bell peppers bring a burst of color and crunch. The purple onion and tomatillo contribute a touch of tangy freshness. Cilantro, garlic, cumin, and lime juice infuse the salsa with the zesty flavors and pull it all together.

How to Make Chickpea Salsa Salad

Now that I’ve built up all this anticipation—let’s make it! My favorite thing is how quick and easy it is—in 15 minutes, you can have this chickpea salsa salad ready to serve.

Get out a large mixing bowl and a cutting board. I like to use my big wooden cutting board for this recipe!

The preparation is a breeze – chop up the bell peppers, purple onion, tomatillo, and cilantro & put them in the large bowl. Cut the corn off the cob carefully, then add the corn to the large bowl.

Open the garbanzo and black beans with a can opener, drain, and add to the veggies in the bowl. Juice the lime, mince 3 cloves of garlic, and add that to the bowl as well. Last but not least, add the cumin and salt. Give it all a good mix, and voila!

Instructions
