You know the desserts you think about making every day. Um yep…it’s these for me. I have never tasted a more delicious thing. I’m blown away by how amazing these Chickpea Pumpkin Blondies taste every time I make them & will be craving them every day of my life! The chickpeas as the base create a doughy, melt in your mouth texture. Combined with the sweetness of maple syrup and chocolate chips…yes please.

Not only are these ridiculously good, they’re simple to make. Always a plus! All you do is throw the chickpeas, pumpkin purée, peanut butter, baking powder, and salt in the blender—blend until the batter is completely smooth. Add the chocolate chips to the mix, pour into a pan, and add more chocolate chips to the top. Next bake for 30 minutes on 350 degrees and you have perfection in a bite!
I like to let them set in the pan for a few minutes! This will definitely make it a lot easier to cut the Chickpea Pumpkin Blondies!

If you know me, I am a healthy dessert girl—especially during the cozy seasons! If I can make a healthy version of my favorite things I will and this Chickpea Pumpkin Blondie recipe has never, will never disappoint & will ALWAYS be a go to favorite.
So let me tell you WHY!
First, the sweetener. Yes, maple syrup still has sugar, but I love making the choice to eat things without refined sugar.
The chickpeas! They are such an amazing source of protein an create such a nice texture!
The chocolate chips. I love to use the brand Lily’s when I use chocolate chips—they’re refined sugar free and taste so good!

Chickpea Pumpkin Blondies
Ingredients
- 1 Can Chickpeas
- 1/2 Cup Pumpkin Puree
- 1/2 Cup Maple Syrup
- 1 Tablespoon Nut Butter
- 2 Teaspoons Baking Powder
- 1 Teaspoon Salt
- 1 Cup Chocolate Chips
Instructions
- Preheat the oven to 350℉.
- Blend all of the ingredients, except the chocolate chips until smooth.
- Add 3/4 of the chocolate chips to the batter.
- Get out a baking dish (I used a 9×13) and pour the batter into the dish. Smooth, add a 1/4 cup out chocolate chips to the top.
- Bake for 30 minutes and serve!
