How To Make Spicy Cashew Dressing

- Step 1: Place the raw cashews in a heat-safe bowl and pour boiling or very hot water over top until they're completely covered. Let them soak for 30 minutes (or overnight if you prefer). This process is essential for a smooth, creamy texture in your raw cashew dressing.

- Step 2: Drain the soaked cashews, then add the cashews, honey, fresh cilantro, rice vinegar, tamari, sesame oil, minced garlic & ginger, lime juice, and red pepper flakes to a high-speed blender or food processor. Blend on high speed until completely smooth.

- Step 3: If the dressing is too thick, add water 1 tablespoon at a time (up to 2-3 tablespoons total) and blend again. Taste and adjust: add more honey for sweetness, lime juice for tang, tamari for saltiness, or red pepper flakes for heat.

- Step 4: Transfer to an airtight glass jar or container. Refrigerate for at least 30 minutes before serving to allow flavors to meld. The dressing will thicken slightly when cold. Simply whisk in a splash of water to thin if needed.

Spicy Cashew Dressing Sweetgreen Copycat
Ingredients
- 1 Cup Raw Cahews soaked
- ½ Cup Fresh Cilantro
- 2 Tablespoons Honey or maple syrup
- 1 Tablespoon Rice Vinegar
- 2 Tablespoons Tamari or gluten free soy sauce
- 1 Tablespoon Sesame Oil
- 2 Garlic Cloves mincd
- 1 Tablespoon Ginger minced
- 1 Lime juiced
- 1 Teaspoon Red Pepper Flakes adjust to spice preference
Instructions
- Soak the cashews in boiling water for 30 minutes (or overnight). Drain and rinse.
- Add soaked cashews, honey, cilantro, rice vinegar, tamari, sesame oil, garlic, ginger, lime juice, and red pepper flakes to a blender. Blend until silky smooth.
