This festive Apple Pear Bread is a heavenly loaf with caramel-like, bread pudding texture that you won’t be able to resist! It’s gluten free, dairy free, refined sugar free…also baked to gooey perfection, and topped with coconut maple drizzle!

I mean, come on! This Apple Pear Bread couldn’t be any more beautiful. So let’s make it!

Time To Bake!

Preheat the oven to 400℉.

In a medium bowl, combine the almond flour, baking powder, salt, and cinnamon—mix well. Now add the maple syrup, egg, and coconut oil. Mix well and set aside.

In a small bowl, add the solid part of the can of coconut cream, maple syrup and xanthan gum. Mix well and set aside.

In another small bowl, combine the GF oats, almond flour, coconut oil, maple syrup, salt & cinnamon. Mix well!

Next, chop the apples and pears into small cubes and sprinkle with cinnamon—set aside.

Get out a bread tin and coat with coconut oil and parchment paper.

Add half of the Bread Layer to the bottom of the tin. Next, all of the Creamy Coconut Layer on top of that.Add about 1/3 of the apples and pears. Now, add the rest of the Bread Layer. Finally finish with the rest of the apples and pears & the Crumble Layer on top!

Let me lay that out:

  1. 1/2 Bread Layer
  2. Creamy Coconut Layer
  3. 1/3 of the Apple/Pear mixture.
  4. Other 1/2 of the Bread Layer
  5. The rest of the Apple/Pear Mixture
  6. Crumble Layer

Cover the bread in tinfoil so the oats don’t burn, and bake for 45 minutes. I like to take the tinfoil off with 10-15 minutes left to let the top get crispy!

Because this bread is more of a bread pudding texture, you’re going to have to let it set for a while before taking it out of the pan! I like to mix a little bit of coconut yogurt (I used Cocojune Vanilla Unsweet) or coconut cream, maple syrup & cinnamon to drizzle on top for serving!

Once the bread has set, you’re ready to serve!

Serving Suggestions!

So, I know I’ve already mentioned that this bread has more of a bread pudding consistency, so I like to serve it like a crisp! It can definitely be served sliced, but I like to throw a slice into a bowl, mash it up, and drizzle some coconut creamer or coconut ice cream on top.

First suggestion—exactly what I said above. A little warm slice with coconut creamer or coconut ice cream (highly recommend this recipe)! A DELICACY.

Of course there’s the obvious—a plain old slice, still divine and flavorful and perfect.

Another fun way to serve this bread is on top of yogurt or oats! If you’re a sweet breakfast type of person, let me tell you you’re going to love this as a topping.

Try with some healthy cinnamon ice cream.

Lastly, even though this bread is sweet as it is—add a little bit of nut butter and a drizzle of maple syrup or honey and you will be in heaven.

Of course, this bread is gluten free, dairy free, and refined sugar free! While it is sweetened with maple syrup, it’s definitely a healthier option and helps set up healthy habits. In my opinion, that is so important!

I will say this time and time again, but training myself to reach for or cook something naturally sweetened, filled with whole ingredients, and actually develop a taste for those things has encouraged me to be consistent with healthy eating. With the holidays right around the corner it can be tempting to either let habits slide and over indulge, or restrict and not enjoy! I think finding the perfect balance is worth a try, and this recipe feels like a good, healthy balance. I finish eating this bread feeling so satisfied—both full and my sweet tooth met!

The ingredients are actually packed with good nutrients. This recipe is like having morning oats in a bread like, dessert form.

Oats are filled with antioxidants, they’re rich in fiber—improving digestion, they’re filled with vitamins & minerals, they lower glucose and cholesterol levels & not to mention…extremely filling!

Cinnamon! Cinnamon is one of my all time favorite spices for many reasons. First, it’s so rich in flavor & can transform a recipe to cozy and nostalgic with just a sprinkle. While it is definitely an aesthetically pleasing spice, there are so many benefits that come with its consumption. With that being said—it’s important to be mindful of the type you are buying. There are two types—Ceylon & Cassia. Ceylon is the type you should buy to reap all of the benefits! Ceylon Cinnamon contains tons of antioxidants and helps with inflammation. It’s even said that it may have anti fungal properties!

Last, but certainly not least—fruit! Fruit is just winning all around in my opinion. It makes everything taste better, it’s rich in fiber, low in calorie and fat content, and just an amazing thing to incorporate in a diet!

How should I store this bread?

Great question! Because it is not a typical “bread” texture, I would suggest the refrigerator or freezer! It keeps so much longer and tastes better cold or when reheated!

Does the flour have to be almond flour?

Absolutely not! While almond flour is my favorite gluten free flour to cook with, there are plenty of other options. To name a few: oat flour, coconut flour, 1 to 1 gluten free baking flour, regular all purpose flour if you’re not gluten free! Use whichever you prefer.
