Gluten Free Chai Cookies

A heavenly fall…into winter treat! Gluten Free Chai Cookies, sweetened with maple syrup and monk fruit—these taste amazing and leave you feeling even better! I’m not kidding when I tell you I had all of these in one day. The coziest spices of cinnamon, nutmeg, allspice—leave you wanting to just curl up on the couch with a little latte & cookie, then never leave!

Making These Delicious Healthy Treats

These cookie take under 20 minutes from start to finish and they’re so dense and delicious!

Preheat the oven to 350℉.

In a medium bowl, combine all of the dry ingredients and mix well.

In another medium bowl, combine all of the wet ingredients and mix well.

Put the dry ingredients into the wet ingredients & stir until everything is well combined.

Use a cookie scoop or spoon to scoop the dough. Make small balls and push them flat. I like to form the cookie into the shape I want it because they don’t really lose their shape in the oven!

Lay parchment paper on a large baking sheet, and bake the cookie for 6-8 minutes.

While the cookies bake, combine the creamer, confectioners sugar, and cinnamon to make the frosting. Mix well.

Once the cookie are finished, let them cool and add the frosting. Enjoy with a chai or pumpkin spice latte!

Alternative Ingredients

While these Gluten Free Chai Cookies are my favorite baked with these ingredients—feel free to use alternative ingredients that you would prefer. I’ll list some options below!

The coconut flour is an ingredient that can be easily swapped out! Some other options would include gluten free flour, chickpea flour, oat flour, or fine almond flour!

The sweeteners in this recipe are also up to you! While I definitely like the flavor of maple syrup in my fall treats, honey, agave, or date syrup would be other great options! As far as granular or powdered sweeteners, I like to use monk fruit! Swerve definitely my go to brand when it comes to using sugar free powdered sweeteners. It doesn’t leave that weird after taste and works just as well as traditional powdered sugar!

The spices in this recipe are also all the way up to you! I know not everyone is a fan of every flavor, so I’ve more or less of the flavors you love to taste in a treat!

Why These Cookies Get Me So Excited!

This was one of those recipes that left me full of anticipation and so unbelievably excited for the holidays, hosting, and every festivity that comes with Thanksgiving and Christmas! It’s crazy to me how much feeling comes with a time of year. So many memories are formed around these times and making cookies is forever one of the best!

My favorite cookies are any type with a confectioners sugar glaze, and that’s one of the many reasons why I love these! When you go to make the glaze, be sure to add the liquid ingredients in smaller amounts than the monk fruit confectioners sugar. The liquid goes a long way with this types of glaze and we want the perfect consistency!

Speaking of Latte

I mentioned above that these Gluten Free Chai cookies pair amazingly with a latte! I have currently been making a Pumpkin Spice Cold Foam every morning that’s so easy, fluffy, and requires nothing but whisking! I’ll let you in on the secret! It’s the most quick and easy little recipe!

Gluten free chai cookies

Pumpkin Cold Foam

1/2 Cup Oat Milk
1 Teaspoon Instant Coffee
1 Teaspoon Monk Fruit (or sweetener of choice)

whisk until foamy

1 Tablespoon Pumpkin Purée
1 Teaspoon Golden Monk Fruit
2 Teaspoons Cinnamon
1/4 Cup Nut Milk Creamer (I like to use Nut Pods)

whisk until foamy

Pour the pumpkin foam over the coffee foam, top with cinnamon & enjoy🤍

What Spices Make Up Chai?

You can tailor chai spice to your palette and which spices you like more or less of. Traditionally it consists of Cinnamon, Allspice, Nutmeg, Ginger, Cloves, and Cardamom! I opted to just use Cinnamon, Nutmeg, Allspice, and Ginger, but add whatever is your favorite out of these flavors! Chai spice has gained immense popularity worldwide, becoming a staple in many coffee shops and homes. Chai lattes, iced chai, and chai-flavored desserts have become commonplace, appealing to those who appreciate the rich, complex flavors of the spice blend. Chai spice also offers health benefits—the spices within it, such as ginger and cloves, are known for their potential to soothe digestion and boost the immune system.

These perfect little Gluten Free Chai Cookies pair perfectly with a pumpkin spice latte! Spiced with, cinnamon, nutmeg, allspice, and ginger. Sweetened with maple syrup, and made with coconut flour—a dessert for any time or day!

  • 1 1/2 Cups Coconut Flour
