Gluten Free Prosciutto Flatbread Pizza with homemade pesto is one of my favorite things to make when I’m craving a good old pizza! The pesto sauce is dairy free, packed with basil, cashews, and so creamy! The almond flour crust is wonderfully crisp, garlic-filled (gluten free) goodness! Not to mention the toppings—prosciutto, tomato, basil, and balsamic glaze. Honestly this flatbread pizza is simple but perfect. 🍕

How to Make Gluten Free Prosciutto Flatbread Pizza

This Gluten Free Prosciutto Flatbread Pizza is truly the health lover’s dream. If that’s you, let me revolutionize your pizza nights with this recipe. It’s simple, delicious, gluten free, dairy free, and incredibly healthy. Here’s a step-by-step guide on how to make it & what you’ll need:

Flatbread Ingredients

  • 2 Cups Almond Flour
  • 2 Teaspoons Baking Powder
  • 2 Teaspoons Garlic Powder
  • 1 Teaspoon Salt
  • Eggs
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Fresh Basil minced

Cashew Pesto Sauce

  • 1 Cup Fresh Basil
  • 1 Cup Cashews 
  • 2 Teaspoons Garlic
  • 1/4 Cup Olive Oil
  • 1 Tablespoon Nutritional Yeast
  • 1 Teaspoon Salt

Toppings

  • Prosciutto 
  • Tomatoes
  • Balsamic Glaze
  • More Basil Leaves

Step-By-Step Instructions

Start with preheating the oven to 375°F.

Now we’ll make the flatbread pizza crust. In a medium bowl, mix together 2 cups of almond flour, 1 teaspoon of baking powder, 1 teaspoon of garlic powder, and a pinch of salt. Get out a small bowl, whisk 2 eggs, 2 tablespoons of olive oil, and a handful of chopped fresh basil in the bowl. Once that’s mixed well, combine the wet and dry ingredients to form a dough. Mix using your hands until all of the ingredients are well combined. Roll the dough into a big ball. Keep in mind, the dough will be stickier than typical pizza dough.

I like to make this flatbread pizza in a cast iron skillet, if you don’t have a cast iron, a baking pan will work just fine! Add a drizzle of olive oil to the cast iron or pan. Get the ball of dough and press it into a circle in the cast iron skillet or on the baking pan. Bake just the dough in the oven for 7 minutes to pre-bake the crust.

While the crust is baking, prepare the pesto! In a blender or food processor, blend together the fresh basil, cashews, garlic, olive oil, nutritional yeast, and salt until smooth.

Remove the pre-baked crust from the oven and spread the pesto sauce evenly over the top. Top the pizza with slices of prosciutto, diced tomatoes, fresh basil leaves, and a drizzle of balsamic glaze.

Bake the pizza for another 15 minutes, or until the crust is golden brown and the toppings are heated through.
