If you’re in the french fry mood but don’t necessarily want all of the calories—these are the real deal and will be the new go to when it comes to a savory snack! Paired with the whipped feta—this dish is a crowd pleaser and has a taste like no other!

How To Bake Crispy Carrot Fries

Preheat the oven to 400℉.

Cut the carrots in half, then into thin strips, this will help bake to a crispy French fry texture! Toss the carrots in a splash of olive oil. Make sure you aren’t putting too much oil in!

Next, the spices—add the garlic powder, paprika, cornstarch, salt & pepper! If you are a spice person—load these up with all the flavoring! You don’t have to stop at the amount I put on the recipe card!

After the spices—chop the bunch of parsley and add to the carrot mixture. Toss them a little more!

Get out a large baking sheet, cover it with parchment paper, and place the carrots spaced out on the parchment.

Bake for about 30 minutes! Or more if you like them extra crispy!

About half way—toss the carrots!

While the carrots bake, blend the feta cheese in a food processor or blender with a splash of nut milk. It’s up to you how creamy you want the whipped feta to be! I prefer it a bit thicker, so I try add as little milk as possible to get it blended! Don’t be too generous when adding the nut milk—a little bit goes a long way! My favorite type of nut milk to use in this recipe is almond milk!

Once the 30 minutes is up, take out the carrots, toss in the left over parsley and serve with the whipped feta!

Such a delicious snack/party appetizer/game day healthy side!

The Perfect Crisp

I’ll be the first one to say it! The worst thing is looking forward to fries—just to have them come out soggy! But this is NOT the case with these Roasted Carrots with Whipped Feta—and I’ll let you in on all of my secrets!

Cut the carrots as thin as possible!

In order to get that perfect crisp, cut the carrot strips really thin, I would say shoot for 1/4 or 1/8 of an inch. They can still be made as wide as you’d like, but this will allow the carrots to bake through in the oven!

Don’t overcrowd the fries!

If you double or triple this recipe—you may end up with a ton of fries! Don’t cook them all on the same baking sheet at once! This is one of the most important parts to a crispy fry. When they’re touching, it doesn’t allow the heat of the oven to hit every side of the fry, and the parts that aren’t exposed and against another fry will be soggy! So, when throwing the carrots on the parchment paper—be sure each one has enough space.

Bake the fries in the top half of the oven!

Another important detail—this helps give the carrots a beautiful, caramelized crisp without a burn!

Baking vs. Frying

The debate of baking vs. frying! It’s not just a preference—there are huge health benefits to eating baked over fried foods. Both methods turn raw ingredients into incredible treats and dishes, but they are done in completely different ways. The difference in nutritional value (of course depending on the ingredients added) is crazy—and sometimes it’s hard to distinguish one from the other when done well!

Baking is definitely a healthier option. When food is baked, it’s being cooked by dry heat, and very small amounts of oil. When something is fried—the cooking is done in hot oil. The oil is absorbed into the food item, increasing the fat and calorie content by a significant amount.

If you are wanting to on cook in an overall healthy manner—try baking more foods! There are so many fun ways to experiment with spices, marinade, crusts, and flavors to enhance a dish and make it just as good when it comes to baking!   • 1 Pound Large Carrots
  • 1 Block Feta Cheese
  • 1 Bunch Parsley
  • 1 Tablespoon Paprika
